A wonderful cake to serve as a special breakfast with coffee or tea. This takes a little time to prepare, definitely worth it.

Apricot Danish Coffee Cake Recipe

Prep Time: 20 minutes

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: 1 10x15 inch jellyroll pan

Apricot Danish Coffee Cake Recipe

Ingredients

  • 1 (18.25 ounce) package white cake mix
  • 3 eggs
  • 1 1/2 cups sour cream
  • 1 (15 ounce) can apricot halves, drained
  • 1 tablespoon butter
  • 1/2 cup slivered almonds
  • 1 (8 ounce) package cream cheese
  • 2 tablespoons milk
  • 2/3 cup confectioners' sugar
  • 2 teaspoons water

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10x15 inch jellyroll pan. Set aside 1/2 cup of the dry cake mix.
  2. In a medium bowl, mix together eggs and sour cream. Stir in the package of cake mix. Batter will be lumpy. Spread batter into the prepared pan. Using the back of a spoon, make 15 wells in the batter, 3 rows of 5. In another bowl, beat together the cream cheese and milk until fluffy. Place one tablespoon of the cream cheese mixture into each well. Place 1 apricot half, cut side up, onto each blob of cream cheese.
  3. In a small bowl, combine the 1/2 cup of reserved cake mix with the butter. stir in the butter until the mixture is crumbly. Stir in the slivered almonds, and sprinkle the mixture evenly over the Danish.
  4. Bake for 30 to 35 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. To make the glaze, stir together the confectioners' sugar and water until smooth, adding another teaspoon of water if necessary. Drizzle over the Danish when cool.

Balsamic Glazed Onions And Shallots Recipe

Ingredients

  • 1 lb. pearl onions
  • 1.50 lb. small shallots
  • 1.50 tsp. salt
  • 0.50 tsp. ground black pepper
  • 2 tbsp. olive oil
  • 4 tbsp. fig balsamic vinegar

Instructions

  1. Heat the oven to 425 degrees F. Toss the onions, shallots, salt, pepper, and olive oil together and transfer to a medium baking pan.
  2. Roast for 30 minutes, toss with 3 tablespoons vinegar, and continue to roast until onions and shallots are tender when pierced by a sharp paring knife — 30 more minutes.
  3. Transfer to a serving platter and drizzle with the remaining tablespoon balsamic vinegar. Serve warm or room temperature.

This is the easiest cheesecake to make — it takes just 15 minutes to assemble and doesn’t require a water bath.

Yield: ONE 9-INCH CAKE

Ricotta Cheesecake Recipe

Ingredients

  • Unsalted butter, room temperature, for pan
  • 3/4 c. sugar, plus more for pan
  • 1 1/2 lb. fresh whole-milk ricotta cheese, pureed in a food processor until smooth
  • 6 large eggs, separated
  • 1/4 c. all-purpose flour
  • Finely grated zest of 1 orange or 2 lemons
  • 1/4 tsp. salt

Instructions

  1. Preheat oven to 375 degrees F. Generously butter and sugar a 9-inch springform pan (3 inches deep). Whisk together ricotta, egg yolks, flour, 6 tablespoons sugar, the zest, and salt in a large bowl.
  2. Whisk egg whites with a mixer on low speed until foamy. Raise speed to high, and gradually add remaining 6 tablespoons sugar, whisking until stiff, glossy peaks form, 3 to 4 minutes. Gently fold a third of the whites into ricotta mixture using a rubber spatula until just combined. Gently fold in remaining whites until just combined.
  3. Pour batter into pan, and bake until center is firm and top is deep golden brown, about 1 hour. Let cool on a wire rack for 10 minutes. Run a knife around edge of cake; release sides to remove from pan, and let cool completely. Serve with citrus-vanilla compote.

Turkey Neck Soup Recipe

Ingredients

  • 6 turkey neck
  • 2 -3 medium potatoes
  • 2 -3 medium carrots
  • 1 medium turnip
  • 1 large parsnip
  • 1 small onion
  • 1 celery rib
  • 1 1?2 cups rice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1?2 cup flour

Instructions

  1. In a large pot boil turkey necks for 2 hours.
  2. Peel and chop vegetables.
  3. After 2 hours remove necks, add flour and add vegetables.
  4. When the turkey necks are cool enough to touch, remove meat from the bones, and return meat to the pot.
  5. Add salt and pepper.
  6. cook for 45 minutes or until the turnip is tender.
  7. Add rice and cook for 15 minutes.
  8. May need to add more salt and pepper to your own taste.
  9. Enjoy
